Liz's Pork Tenderloin with Cream Sauce

 

Makes four servings

 

1 lb pork tenderloin

1/3 cup chopped onion

cup chopped carrots

1/3 cup butter

cup beef stock

1 tbsp lemon juice

tsp grated lemon peel

1/8 tsp thyme

1 bay leaf

1/3 cup milk

1 tbsp flour

1 tbsp parsley

Salt and pepper to taste

 

Brown pork, onions and carrots in butter. 

Add beef stock, lemon juice, lemon peel, salt, pepper, thyme and bay leaf. 

Cover and simmer until tender, about 40 minutes. 

Remove meat to warmed platter. 

Measure pan juices add water to make 1 cup. 

Return to skillet. 

Stir in flour then milk and stir until thickened. 

Pour sauce over meat sprinkle with parsley.
