Liz's Pecan Puffs

cup butter

2 tablespoons sugar

1 teaspoon vanilla

1 cup pecan meats, ground

1 cup cake flour

Powdered sugar

 

Preheat oven to 300 degrees. 

 

Beat butter until soft.  Add sugar and blend until creamy. 

Add vanilla.  Stir the ground pecans and flour into the butter mixture. 

Roll the dough into small balls. 

Place balls on a greased baking sheet and bake for about 30 minutes. 

Roll while hot in powdered sugar. 

To glaze, put the sheet back into the oven for a minute. 

Cool and serve. 

Makes about 40 1-inch balls.
