JEAN'S PORK FRIED RICE

1 C  Long grain rice

2 cups water

1 tsp salt

2 tbs butter

2 pork chops

1 sm. onion (minced)

1 cloves garlic (minced)

1 shaved or shredded carrot

soy sauce

2 eggs (beaten)( fry the egg and then chop into small pieces) set aside

2-3 tbs. oil for frying

 

In a 2 quart casserole dish add your rice, salt, butter and water.

Cover and microwave on high for 20 minutes. When done, fluff the rice and set aside.

In a deep frying pan heat oil. Remove excess fat from the pork chops and brown on both sides  

Half way through the cooking add the onions and garlic ( do not let the garlic burn)

Remove pork chops from the pan and cut into small cubes

Add the pork, back to pan and add the rice and carrots.

Turn up the heat and quickly add soy sauce to taste

When rice is the color and taste you want add the egg stir and serve
